How to Eat More Vegetables When You Hate Vegetables

You don't hate vegetables. You hate BAD vegetables — the overcooked, unseasoned, mushy kind from childhood. Let's fix that.

Roast, don't steam. Olive oil + salt + 200°C = crispy, sweet, delicious

Hide them. Spinach disappears into smoothies. Grated zucchini vanishes into pasta sauce. Cauliflower "rice" mixes with regular rice

Start with the least "vegetabley" vegetables: sweet potato, carrot, bell pepper, corn

Put cheese on them (temporarily). Roasted broccoli + parmesan. The goal is to eat vegetables — however they get in is fine

Try them in a different format: crispy kale chips, zucchini fritters, carrot "fries"

Dip them: hummus, guacamole, tzatziki, peanut sauce. Raw veg + dip = gateway drug to vegetables

The "one bite" rule: try ONE bite of a new vegetable per week. No pressure to finish. Just one bite
